Courgette being one of the star of the seasons, I have incorporated it in this risotto recipe on the menu this week. The meal is served with crumbled British Feta cheese, roasted hazelnuts and a sweet pepper oil.
Ingredients:
Risotto Rice, Courgette, Courgette Flowers, Onions, Shallots, Garlic, Thyme, Sweet Pepper, Vegetable Stock (Celery), Feta Cheese (Milk), Hazelnuts (Tree Nuts), Olive Oil, Salt and Peppercorn.
